picked up my popcorn machine from LD now it is just the waiting game. ordered a couple African green beans. small amount for now but will increase as i get better at roasting.

btw a certain department store that starts with an 's' has a kenmore variable temp kettle for 62.99.

I have a Gaggia MDF grinder and a Gaggia Baby Twin. I got them as my first actual serious coffee gear last year from Whole Late Love. It was an amazing deal I could not pass on ...

I am getting increasingly irritated by the dosser on my grinder and the weak steam of my machine. I am thinking of getting a Nuova Simonelli Oscar or an expobar and a different grinder, something like a doserless Cunill Tranquilo.

The problem with coffee is that fresh beans are hard to find and you end up having to roast them yourself

being in a place like gastown i thought that would not be a problem. it is the one place i half expected to have a much more substantial coffee presence. unfortunately i have to buy my coffee on one of 3 days at jj bean which are the days they ship out their freshly roasted beans to their locations. there have been some nice roasts and a few lousy ones but for the most part i have been happy. they are a little overpriced though.

hopefully i can do a half decent job roasting my self. now my only issue is dealing with my water.

being refurbished i expected slight problems. the top plastic bean holder was broken but i have a spare from my other grinder. because the holder is the same i knew exactly how many beans i needed which is great as it makes manual operation easier. i have not roasted anything yet and may wait until the weekend. i bought a bag of Brazilian roast from jjbean and have tried the chemex for the first time.

you are right nothing else has come close to the quality from the chemex. my first try worked out perfectly. can't wait to try fresh roasted, the Brazilian was roasted jan.10.

the chemex is just part of it. it is the filter that does all the work. the chemex filters come in a box of 100 and they are not the same as your usual drip machine filters. as mentioned earlier one of the most important/expensive items is the grinder. also clean water at about 200 deg Fahrenheit.

when using a Chemex...don't forget to do two things. a) pre-heat the glass carafe and b) rinse the paper filter, otherwise it may taint your coffee flavor.

that said, while it is somewhat costly, it'll last a lifetime and save you money in the long run. buy the Coava Kone v2 for the Chemex:

gonna take a small break buying stuff except for beans. i expect the filters will go fast so will think about it then. still want to pick up the kettle i saw for 64.00. am also planning my espresso machine purchase down the road.

you won't regret getting a Kone for your Chemex. the paper absorbs some of the oils that give coffee it's flavor. granted, in this oil is a compound called Cafestrol, which increases your cholesterol level's. the paper filters remove/absorb this compound, negating this cholesterol booster.

you can read about Cafestrol here:



the flavor it add's is amazing...but serum cholesterol is your 'total' blood cholesterol level, so if something can boost it by up to 8%, that's not good for your health.

i do have bad cholesterol, but i may buy one to try out. for me good food and drink outweigh everything else! still working out quantity of coffee to water as i do not have a scale. either way the coffee tastes good even as a beginner.

wowww this is an amazing thread...

question for you guys- i'm new to home-brewed coffee, and i'm wondering if there's anything my once-brewed (french press) grinds can be used for? I don't drink more than 2 or 3 cups in a day, but the grounds look like they could be used for another round... or is this totally not the case?

Moe is right...compost is definitely one use. another...when we had an inground pool, was surround the cement with the grounds. it repelled the worms so they wouldn't crawl into our pool and die. seemed to work!

took a stab at my first roast. probably should have ordered different beans. African tends to be smaller and takes a lot longer to crack. was trying to use instructions from a video. 2nd crack takes 6 minutes. also because of the size of the bean the amount of beans to use is different. will try it tomorrow but i think there is a lot of loose chaf in the mix. even though i went 7 minutes it on the 2nd half cup it was that dark. the beans used were Kenyan which tend to be roasted light when bought retail. my other bean is Ethiopian which i will try on the weekend.

hey Moe...the cooler ambient temperatures of winter are why it took longer to reach your 2nd crack. in the summer, it will be different.

as for the chaff, don't worry about it. my first roasts gave me very sour coffee, I asked if it was because of the chaff. I was told by everyone on coffeegeek.com that it wouldn't affect the flavor.

may have also put too much in slowing its spin. was not the most even roast. tried it out and it was not that great. at first it was nice but there was an after taste i did not like.

ah...yes...the amount put in does matter. you add beans until it just slowly turns in a circle.

edit - if my memory serves me correctly, that's about a quarter cup of beans.

well the video i watched 1/2 a cup was what did that. unfortunately the beans i bought are African and are smaller in size then beans from south/central America. 1/2 cup and it was spinning way too fast. 3/4 was probably too much so will try between the 2 next time.

because I use the Kone, I use a medium fine grind so I don't get too much sediment.

for my 3 cup Chemex...I use 16g of coffee per dose. I know...it's high, but I like a strong coffee.

that's the thing about coffee Moe, you adjust the grind until you find the flavor profile you like the most! if it's too fine though, you will find the coffee to get bitter...and if you have to big a grind, it won't have enough flavor.
